Tomato Rice

Ingredients to make Tomato Rice

  • rice raw 1/2 cup
  • onion diced 1
  • ginger garlic paste 1 tsp
  • tomatoes diced 1 cup
  • tomato puree 2 tbsp
  • tomato sauce 1 tsp
  • Whole red chillies 2
  • green chillies (seeds removed) 1
  • Channa dal 1/2 tsp
  • Urad dal 1/4 tsp
  • mustard seeds 1tsp
  • curry leaves 12
  • fenugreek seeds 4
  • hing a pinch
  • cashewnuts fried 2 tbsp
  • star anise 1
  • cloves 2
  • dessicated coconut 1 tbsp
  • Sambhar masala 1 tsp
  • salt 1/2 tsp or as per taste
  • red chilli powder 1/4 tsp
  • sugar 1/8th tsp
  • coconut oil 3 tbsp

How to make Tomato Rice

  1. Cook rice adding salt, star anise, cloves and some oil. Drain excess water and spread rice in a big plate. (Rice should to be 95% cooked)
  2. In a wok, heat oil, add hing and fenugreek seeds, mustard seeds and curry leaves.
  3. As the seeds splutter, add dals and fry till golden. Add the onion.
  4. Cook till onions turn transparent.
  5. Add ginger garlic paste, fry well.
  6. Add tomatoes and cook till soft. Add tomato puree, tomato sauce, salt and all the masalas mentioned. Add coconut and fried cashews.
  7. Now mix cooked rice and stir well till tomato mixture gets coated well. Remove from heat and keep covered.
  8. If adding raw rice - Add rice in tomato mixture. Add 3/4 cup water, salt 1/2 tsp, and cook till 2 whistles on high heat. Remove from heat.
  9. Serve with curd/stew.

My Tip:

Use sambhar masala for flavour.
