Ingredients Serving: 4

  1. 3/4 Cup all purpose flour
  2. one egg
  3. 1/2 cup + 2 tbsp plain or Greek Yoghurt
  4. 1/3 cup oil
  5. half cup granulated sugar
  6. half teaspoon Vanilla extract
  7. one teaspoon baking powder
  8. half teaspoon salt
  9. For Sugar Glaze
  10. half cup icing sugar
  11. Juice of 1 lemon or 1/2 orange
  12. 1-2 tbsp or more water

Instructions

  1. preheat the oven to 180 and line the baking tin
  2. Sieve baking powder , flour and salt keep it aside
  3. blend yoghurt and sugar thoroughly in a bowl
  4. add egg and blend well
  5. add oil and Vanilla extract mix well
  6. add the dry ingredients and cut and fold gently until the batter is well combined
  7. Pour in prepared cake tin, bake for 30-40 minutes until done
  8. Allow to cool for 30 minutes. Demould and allow to cool completely
  9. In a bowl mix juice of lemon or orange with icing sugar depending the preferred taste of the glaze
  10. Add 1 tbsp water at a time to the mixture and whisk well. If you want thinner glaze add more water and more sugar for thicker glaze
  11. Pour the glaze on the cake. Allow to cool and harden before serving or cut the cake and serve immediately
