About Baigan Bhaja Recipe

Is a simple Bengali dish of pan fried Brinjal in simple spices.

Baigan Bhaja

Ingredients to make Baigan Bhaja

  • Eggplant - 1 large
  • Chili powder - 1 tsp
  • turmeric powder - 1/2 tsp
  • Garam masala Powder - 1 tsp
  • amchur powder - 1 tsp
  • garlic Powder - 1 tsp
  • sugar a pinch
  • Rice flour as required
  • salt for taste
  • mustard oil for frying

How to make Baigan Bhaja

  1. Wash and slice the brinjal into slices. Keep it immersed in salt water till use (It helps to remove the bitterness in brinjal if any)
  2. Mix all the Ingredients and sprinkle it on the brinjal pieces. Let it marinate for 10 to 15 minutes.
  3. Heat oil in a pan. Take rice flour in a plate. Coat each slice with rice flour. Dust off the extra rice flour
  4. Pan fry the brinjal slices till crisp and golden brown on both sides.
  5. Drain fried brinjal slices on paper tissues and serve hot.

My Tip:

Serve Baigan Bhaja hot with yogurt or any yogurt dip and some bread or Dal and rice.
