Lemon Rice/ Chitranna

Ingredients to make Lemon Rice/ Chitranna

  • Chitranna Powder (Can be made in bulk & stored for multiple uses)
  • 2 measures urad dal
  • 2 measures chana dal
  • 2 measures sesame seeds
  • 4 measures coriander seeds
  • 1/2 measure cumin seeds
  • 5 to 6 methi seeds
  • A small piece turmeric
  • 2 whole red chillies
  • 5 to 6 peppercorns
  • 1 tbsp Coconut oil
  • For the tempering:
  • 1 tsp mustard seeds
  • 2 whole red chillies, broken
  • 1 green chilly slit
  • 6 to 7 curry leaves
  • Handful raw peanuts
  • 3 tbsp coconut oil
  • Other ingredients:
  • 1 big cup cooked & cooled rice
  • 1/4 cup coconut gratings
  • 1 tbsp lemon juice
  • Salt to taste

How to make Lemon Rice/ Chitranna

  1. For making the Chitranna Powder: Roast all the ingredients mentioned under the powder section in about 1 tbsp oil till aromatic. Grind into a semi coarse powder.
  2. For making Chitranna Rice: Mix pre cooked & cooled rice with about 2-3 tbsp chitranna powder & salt. Keep aside.
  3. In a wok add coconut oil, next add mustard seeds. When they splutter, add the peanuts, roast for a while until lightly toasted.
  4. Add the broken whole red chillies, slit green chillies & curry leaves.
  5. Add the rice to the tempering, stir briefly for a minute till the rice & the tempering is mixed well. Add the grated coconut. Stir.
  6. Add in the lime juice. Serve hot.

My Tip:

Leftover precooked rice works best for this recipe.
