ABOUT Lemon Rice/ Chitranna RECIPE

Chitranna is a rice-based dish widely prepared in South India. It is prepared by mixing cooked rice with a special seasoning called oggarane. Within karnataka itself, this dish is found in many variations.

Ingredients Serving: 2

  1. Chitranna Powder (Can be made in bulk & stored for multiple uses)
  2. 2 measures urad dal
  3. 2 measures chana dal
  4. 2 measures sesame seeds
  5. 4 measures coriander seeds
  6. 1/2 measure cumin seeds
  7. 5 to 6 methi seeds
  8. A small piece turmeric
  9. 2 whole red chillies
  10. 5 to 6 peppercorns
  11. 1 tbsp Coconut oil
  12. For the tempering:
  13. 1 tsp mustard seeds
  14. 2 whole red chillies, broken
  15. 1 green chilly slit
  16. 6 to 7 curry leaves
  17. Handful raw peanuts
  18. 3 tbsp coconut oil
  19. Other ingredients:
  20. 1 big cup cooked & cooled rice
  21. 1/4 cup coconut gratings
  22. 1 tbsp lemon juice
  23. Salt to taste

Instructions

  1. For making the Chitranna Powder: Roast all the ingredients mentioned under the powder section in about 1 tbsp oil till aromatic. Grind into a semi coarse powder.
  2. For making Chitranna Rice: Mix pre cooked & cooled rice with about 2-3 tbsp chitranna powder & salt. Keep aside.
  3. In a wok add coconut oil, next add mustard seeds. When they splutter, add the peanuts, roast for a while until lightly toasted.
  4. Add the broken whole red chillies, slit green chillies & curry leaves.
  5. Add the rice to the tempering, stir briefly for a minute till the rice & the tempering is mixed well. Add the grated coconut. Stir.
  6. Add in the lime juice. Serve hot.
