Ingredients Serving: 2

  1.  1 cup Okra (Bhindi)chopped
  2. 1/4 cup whisked yogurt
  3. 2 + 1 tablespoons Oil
  4. ½ teaspoon Cumin seeds
  5. ½ teaspoon mustard seeds
  6. 1/2 tsp methi dana
  7. Pinch asetafoetida
  8. Curry leaves 4
  9.  1/2 cup Onion finely chopped
  10. 1 tbsp Ginger garlic chilli paste
  11. ¼ teaspoon Turmeric powder
  12. 1 teaspoon Red chili powder
  13. 1 teaspoon Coriander powder
  14. 1/2 tsp Kasoori methi
  15. 1/4 tsp garam masala
  16. 1 tbsp besan
  17. Coriander leaves to garnish

Instructions

  1. Wash and pat dry the bhindi/okra and cut both ends
  2. Heat 2 tablespoons of oil in a frying pan over medium heat and stir fry the okra till they are tender. This should take about 7-8 minutes.
  3. Take them out in a bowl and use the same pan for making gravy.
  4. Heat 1 tablespoon oil, over medium heat.
  5. After oil is moderately hot add the cumin seeds, mustard seeds and asafetida as the seeds crack, turn down the heat to low.
  6. once they splutter add methi Dana, whole red chilly nd curry leaves.
  7. add the chopped onion and saute till the onions changes color or becomes translucent.
  8. add the ginger-garlic paste and saute for about 15-20 seconds or till the raw aroma goes away. by now the onion will turn light brown or golden.
  9. add spices like chilli powder, turmeric, coriander powder and salt to taste. fry the masala on low flame
  10. add some water so that masalas don't get burned
  11. Add the besan and stir fry for about 1 minute until it has light aroma, and is golden brown in color. Besan gives the thickness to gravy.
  12. Now add whisked yogurt.
  13. Immediately stir to combine on low flame otherwise yogurt may curdle.
  14. Mix well and simmer for 2-3 minutes.
  15. Add water to adjust consistancy
  16. Now add cooked okra.
  17. Now add garam masala and kasuri methi.
  18. Mix and cook for 2-3 minutes or till the bhindi gets heated through.
  19. Do not cook longer otherwise okra may get too soft and mushy.
  20. Serve Dahi bhindi with roti or paratha. You can serve kachumber salad on side to make complete healthy meal.
