Ingredients to make Uruzhaikehangu varuval

  • Onion - 2 large fine chops
  • Tomato - 2 large fine chops
  • Ginger Garlic Paste - 2 Tbsp
  • Potato - 4 large (boiled and pealed)
  • Chilli powder - 1 tbsp
  • Dhaniya powder - 1 1/2 tbsp
  • Turmeric powder - 1/4 tbsp
  • Garam Masala - 1/2 tbsp
  • Kasuri methi - 1/4 tbsp
  • Coriander - fine chops 2 tbsp
  • Oil - 4 tbsp
  • Salt to taste

How to make Uruzhaikehangu varuval

  1. Start with pealed potatoes. Cut them into 8 peaces each. Then add chill powder, dhaniya powder, turmeric powder and salt to the potatoes and mix with hand. Mix well. keep it aside.
  2. Now heat oil in a pan. When it is hot slow down the flame and add Kasuri methi, saute well. Add the onion, saute till its glassy.
  3. Then the tomato to be sauted till  get mashed with the onion. Then add the ginger garlic paste, add coriander. Then keep sauteing till the oil comes out. At this stage add the marinated potatoes. Now mix well with spatula.
  4. Put the dish on a slow flame. keep sauteing now and then. Wait for the oil to leave, then add garam masala and remove from the flame. Garnish with coriander and server hot.
My Tip: You can have it with curd rice or lemon rice
