Ingredients to make Ghosale Sheere Chutney/ Ridge Gourd Peel Chutney

  • 1 cup tender ridge gourd peels
  • 2 green chillies
  • 1 tbsp Cumin seeds
  • 1 tbsp ghee
  • 3/4th cup freshly grated coconut
  • Salt to taste
  • Water to grind ( as required for a chutney consistency )

How to make Ghosale Sheere Chutney/ Ridge Gourd Peel Chutney

  1. Wash the ridge gourd and peel well, ensure that you only take the tender ones.
  2. Heat a griddle, add the ghee, now lightly roast the cumin seeds first. Keep aside.
  3. Next roast the ridge gourd, peel till they wilt a little. Do not brown them too much. Lastly saute the green chillies briefly.
  4. Now in a mixer grinder, add the roasted ingredients, freshly grated coconut and salt
  5. Grind to a coarse mixture adding little water. Do not make the chutney, too watery or too dry. Grind it till the peels blend well with the coconut.
  6. Serve as an accompaniment with dosas, idlis, appams or simply as a side dish with your meals.
