ABOUT Mushroom yakhni biryani RECIPE

This lovely biryani will definitely tickle your taste buds with it yummy taste. Scrumptious, aromatic and comforting biryani which is not much spicy and can be added to your kids lunch boxes too. Easy and simple layered perfectly to taste. Enjoy it with tasty cucumber tomatoe raita.

Ingredients Serving: 8

  1. Rice - 6 cups basmati rice
  2. Water - 12 cups
  3. Onions - 4 sliced to fry
  4. Spices To cook rice :
  5. 3 cloves, 1 cinnamon, 4 cardamom, 1 tbsp ghee, bay leaves
  6. For mushroom yakhni:
  7. 4 cloves, 3 cinnamon, 5cardamon,2 star ainse, bay leaves
  8. Oil + ghee
  9. Tomatoes - 5
  10. Onions - 5
  11. Green chillies - 2
  12. Curd - 1 cup
  13. Mushroom - 600 grams
  14. Ginger garlic paste - 2 tbp
  15. Red chilli powder - 2 tbsp
  16. Dhania jeera powder - 2 tbsp
  17. Biryani masala powder - 1 tbsp
  18. Turmeric - 1 tsp
  19. Kewra water - few drops
  20. Saffron milk - 1/2 cup + few saffron strands
  21. Mint leaves - a handfull

Instructions

  1. WASH ANS SOAK 6 CUPS RICE IN 12 CUPS WATER
  2. ADD 2 TBSP GHEE, 3 CLOVES, 1 "CINNAMON, 3 CARDAMON COOK IN A RICE COOKER
  3. OPEN FLUFF AND LEAVE IT TO COOL CAN INVERT ON A BIG THALI TOO
  4. TAKE A DEEP VESSEL ADD 2 TBSP OIL. FRY 5 ONIONS TILL BROWNED
  5. REMOVE ON A PLATE
  6. ADD SUFFICIENT GHEE AND OIL FEW BAY LEAVES AND A HANDFULL OF CASHEWS
  7. FEW CLOVES STAR,1 AINSE, 4 CARDAMON, 2CINNAMON STICKS
  8. ADD 5 SLICES ONIONS
  9. SAUTE TILL TRANSPERANT ADD 2 TBSP GINGER GARLIC PASTE 2 GREEN CHILLIES AND SAUTE FURTHER
  10. ADD 5 CHOPPED TOMATOES 2 TBSP DHANIA JEERA POWDER
  11. 2 TBSP RED CHILLI POWDER
  12. 1 TSP TURMERIC
  13. SAUTE
  14. COVER FOR 5 MINUTES
  15. OPEN MIX WELL
  16. WASH AND DICE MUSHROOM TO 2 HALVES
  17. ADD TO THE MASALA
  18. ADD 1 1/2 TBSP BIRYANI MASALA
  19. ADD SALT TO TASTE
  20. COVER AND LEAVE FOR 10 MINUTES
  21. OPEN ADD 1 CUP CURD
  22. MIX AND SIMMER FOR FEW MINUTES DRIZZLE PUDINA LEAVES AND COVER.
  23. REMOVE 3/4 OF THE MUSHROOM YAKHNI IN A VESSEL
  24. LAYER SOME RICE OVER THE REMAINING YAKHNI
  25. MAKE A LAYER OF MUSHROOM YAKHNI OVER
  26. DRIZZLE PUDINA LEAVES
  27. DRIZZLE FRIED ONIONS
  28. REPEAT LAYERS. SPREAD FRIED ONIONS, SPRINKLE SOME TURMERIC AND POUR SOME GHEE AND SAFFRON MILK
  29. DRIZZLE FEW DROPS OF KEWRA WATER COVER AND LEAVE FOR 10MINUTES
  30. OPEN AND SERVE
  31. TASTY MUSHROOM BIRYANI READY!
