ABOUT Egg curry( cooker style) RECIPE

Yes! You read it right. It is cooked in a cooker. The aromatic flavor is awesome. One of my mom's quickies. Enjoy the flavour of egg in your curry.

Ingredients Serving: 2

  1. Boiled eggs 4
  2. Onion 1.5 medium
  3. Tomato half
  4. Garlic 4
  5. Ginger 1 inch
  6. Green Chilli 4
  7. Dried red chilli 2
  8. Cloves 4-5
  9. Black pepper corns 1tsp
  10. Green cardamom 4
  11. Cinnamon stick 1 inch
  12. Bay leaf 2
  13. Cumin seeds half a tsp
  14. Coriander powder 2 tsp
  15. Turmeric half tsp
  16. Salt
  17. Red chilli powder half tsp
  18. oil
  19. Half tsp ghee
  20. Coriander leaves to garnish

Instructions

  1. Fry the hard boiled eggs. Slit them vertically all round or in 4 parts and keep them aside
  2. Grind onion, tomatoes, red chilli, green chilli, ginger, garlic, cloves cinnamon cardamom, black pepper corn with a little water.
  3. Heat oil in a cooker. Add 2 bayleaves. And cumin seeds. Put the grinded masala and fry for 10 mins.
  4. Add coriander powder turmeric and red chilli powder and salt. Fry for another 10 minutes adding water in between.
  5. Now add the eggs. Saute for 2 minutes. Put desired amount of water. Adjust salt. And bring it to one whistle.
  6. Before serving add a dash of ghee and put coriander leaves. Enjoy with roti or rice.
