Banana and Pumpkin Seed Bread

Ingredients to make Banana and Pumpkin Seed Bread

  • 4 ripe bananas mashed
  • 100 grams butter
  • 1 1/2 cups whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 pinch of salt
  • 2 eggs
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup pumpkin seeds
  • 2 tblsp milk
  • For the glaze:
  • 1 cup icing sugar
  • 1/2 tsp vanilla
  • 2 tsp milk
  • sliced bananas

How to make Banana and Pumpkin Seed Bread

  1. 1. Melt the butter in a large bowl and add the sugar to it and set aside.
  2. 2. Beat in the eggs one by one until you can see it incorporated well with the butter and sugar.
  3. 3, Add the vanilla extract and the milk and beat for two minutes.
  4. 4. Add all the mashed banana and mix well. Put a sifter on top of this bowl and sift in the whole wheat flour, baking powder, baking soda and salt. Mix until just combined.
  5. 5. Stir in the pumpkin seeds and pour into a prepared loaf tin that has been lined with butter paper. Bake for 45 minutes of until a skewer comes out clean at 180 degree centigrade.
  6. 6. Remove and cool. For the glaze mix together the vanilla, milk and icing sugar. Pour over the cooled cake. And top with sliced bananas.

My Tip:

You can even add walnuts and raisins

Can i skip pumpkin seeds completely? Will it affect da taste of da cake? Actually your recipe is so tempting DAT am planning to make it early tomorrow morning...can't wait to bake it!!! N I Dnt HV pumpkin seeds in my home....thank u in advance
