Yogurt Walnuts and Pomegranate Sandwiches

ABOUT Yogurt Walnuts and Pomegranate Sandwiches RECIPE

This tasty sandwich filling was very delicious, creamy and small pieces of crunchy walnuts gave a nice texture to the sandwiches. I packed these for my kids lunch boxes today. My kids and their friends loved them very much. Tiffin box came back home empty, but with a demand to make the same sandwiches again tomorrow.

Ingredients Serving: 4

  1. 8 sandwhich bread slices
  2. 1 cup strained thick yogurt
  3. 1/2 cup veg mayannaise
  4. 1/4 cup tomato ketchup
  5. Handful of broken walnuts
  6. Handful of pomegranate arils
  7. 1 small capsicum, finely chopped
  8. 1 teaspoon black pepper powder
  9. salt as per taste
  10. 1 small carrot, grated
  11. 1 small cucumber, grated
  12. 3-4 tablespoons of thinly sliced cabbage
  13. 1/8 cup or 3-4 tablespoons Ghee or butter
  14. 2-3 tablespoons finely chopped corinder leaves

Instructions

  1. Chop and grate all vegetables, walnuts and Pomegranate arils ready.
  2. Add other ingredients except bread and butter. Mix well until well incorporated. Your s andwhich filling is ready.
  3. I applied ghee on one side of all bread slices.
  4. Apply a generous amount of the filling
  5. I am using my stove top sandwhich maker. I greased it lightly on top and bottom part. You can grill it in tawa or otg or electric sandwhich maker.
  6. Keep the sandwhich in the maker and roast on low flame. I applied some ghee on outer sides of the bread.
  7. Cook on both sides for 2-3 minutes or till golden brown crust forms on the bread.
  8. Do this with all the other sandwiches. Serve hot with ketchup or have with salad. Best for kids lunch box.
