Ingredients to make kara paniyaram

  • 1 cup Moong ( duli ) dal
  • 1/2 cup Raw rice
  • 1/2 cup Idli ( boiled) rice
  • 1/4 cup Urad dal
  • For tempering
  • 1tsp mustard
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 1 onion chopped
  • 3_4 green chilled chopped
  • small piece of ginger grated
  • sprig of curry leaves & coriander chopped
  • 1/2 tsp hing
  • Salt to taste
  • 1/2 tsp cooking soda
  • oil for making paniyaram

How to make kara paniyaram

  1. Soak dal and rice for 3- 4 hours
  2. Grind it to a smooth paste in a mixer grinder. Transfer to a bowl. No need of fermentation
  3. Heat the pan with little oil . Add mustard seeds,chana dal and urad dal when they splutter and turn golden colour, add Hing.
  4. Now add chopped onions, green chillis, grated ginger, curry leaves and saute for 2- 3 minutes. Switch off the flame and add chopped coriander.
  5. Once cooled mix it with batter, add salt, cooking soda and mix well, now the batter is ready to make paniyarams
  6. Heat the paniyaram pan and little oil in each mould.
  7. Pour the batter with a small laddle in each mould till 3/4 th full. Cover it with lid and cook for2-3 minutes.
  8. Turn the paniyaram and let it cook for 2-3 minutes
  9. Add little oil if needed.
  10. Serve hot with your choice of chutney
