Ingredients to make Cardamom & Pistachio Cake

  • 300 grams sugar
  • 300 grams flour
  • 2 tsp cardamom powder
  • 1/2 cup pistachio finely chopped
  • 2 - 1/2 tsp baking powder
  • Pinch of salt
  • 3 eggs (white , yellow separated at room temperature)
  • 1/4 cup vegetable oil
  • 1 tsp vanilla essence
  • 1/2 cup hot milk

How to make Cardamom & Pistachio Cake

  1. Always when you start, preheat the oven for 20 minutes. Line a cake pan with butter paper on the bottom and at the sides, leaving a bit of an extra, so that you can pull out the cake after it;s baked.
  2. First to begin with, In a medium bowl, beat egg whites till airy and in another bowl beat egg yellows till creamy.
  3. Now in the yellow’s add vanilla, sugar, cardamom powder & oil and beat till 85% of sugar is dissolved.
  4. Now with the help of sieve (make three parts of flour & mix into it baking powder, salt) add one part of flour at a time and mix, once all the flour is incorporated, add the milk and mix well.
  5. Now you have a creamy pale mixture, add in the beaten egg whites and fold the mixture with cut & fold method, this will help the mixture to hold the air & give a fluffier cake.
  6. Pour in this mixture into the baking tin & At the end sprinkle the pistachio on the mix & bake for 45 minutes on 240 degree.
  7. When done, let the cake cool for an hour, just cut into simple slices & enjoy every bite of it with a cup of tea…!!
