Here is an Innovative Wrap for your "Shravan" month fast. I have added Sama flour , grated Carrot, and mashed Potatoes to the hung curd. I have made roti of Amaranth flour for fast and wheat flour roti for non fasting.

Ingredients Serving: 4

  1. For fasting.
  2. Hung curd 1/2 cup.
  3. Sama flour( barnyard millet flour) 1/2 cup.
  4. Potato boiled and mashed 2 big.
  5. Carrot grated 1
  6. Ginger grated 1 tsp
  7. Green Chilli paste 1 tsp
  8. Pepper powder 1 tsp.( to taste)
  9. Sendha namak to taste.
  10. Coriander leaves chopped 2 tsp.
  11. Clarified butter for shallow frying.
  12. For roti.
  13. Amaranth flour 1 cup.
  14. Potato boiled and grated 1 small.
  15. Curd 2 tsp
  16. hot water
  17. Clarified buttet 1 tbsp
  18. Salt for fast to taste
  19. Veges
  20. Carrot chopped Julienne( / grated cartot 1 carrot)
  21. Cucumber julienne( 1 cucumbet)
  22. Beatroot cut into julienne 1/2 ( optional, you can use veges available and can eat in fast)
  23. Tomato ( optional)
  24. For chuteney
  25. Woodapple pulp. 3 tbsp
  26. Dates pureed 2 tasp
  27. Salt for fast to taste
  28. Green chilli paste to taste
  29. For non fasting pattie
  30. Sweet corn boiled and coarse ground 1/2 cup
  31. Onion chopped fine and sauted 1
  32. Red chilli powder to taste
  33. coriander powder 1 tsp
  34. Garam masala 1/2 tsp
  35. Turmeric 1/4 tsp
  36. Salt to taste.
  37. Wheat flour roti 4
  38. Oil for shallow frying.

Instructions

  1. For fasting
  2. Mix hung curd, add Sama flour.
  3. Add potato, carrot and all masala.
  4. Add 1 tsp ghee. Adjust salt( for fast) and all masala..( ginger, pepper, green chilli,)
  5. Add chopped coriander leaves.
  6. Shape in to a roll Pattie.
  7. Shallow fry in clarified butter.keep aside.
  8. Mix grated potato in Amaranth flour. Add 1 tsp ghee.
  9. Add hot water with spoon , be careful not to add more.
  10. Make a dough and cover for some time.
  11. Make balls of flour
  12. Roll roti with soft hands very carefully.
  13. Roast from both the sides on nonstick griddle by applying little ghee with the help of brush.
  14. Now roll your Pattie in Amaranth roti. Spread veges.
  15. Enjoy your wrap with home made Wood apple and date chutney. Or tamerind and date chutney.
  16. For chuteney
  17. Mix all ingredients for chutney. Keep in refrigerator.
  18. For nonfasting Pattie.
  19. Add sauted onions and crushed sweetcorns.
  20. Add garlic, chilli powder, turmeric, coriander powder, garam masala. Adjust salt.
  21. Make patties and shallow fry in oil.
  22. Make wheatflour roti.
  23. Serve by spreading vegetables and with Tomato ketchup.
  24. Make a wrap and serve.
