Ingredients Serving: 3

  1. For soya chilli:
  2. Soya chunks 1 cup
  3. Chilli powder 1 tsp
  4. Garam masala 1 tsp
  5. Corn flour 2 tsp
  6. Salt as required
  7. Oil for deep frying
  8. For kushka:
  9. Zeera rice or basmathi rice 1 1/4 cup
  10. Cloves 2
  11. Star anise 1
  12. Marati mokku 1
  13. Cinnamon 4
  14. Bay leaf 1
  15. Onion 2 nos
  16. Green chilles 2
  17. Chilli powder 1 tsp
  18. Garam masala or briyani masala 1 tsp
  19. Salt as required
  20. Tumeric powder 1/4 tsp
  21. Ghee 2 tsp +1 tsp
  22. Lemon juice3 1 tsp

Instructions

  1. SOAK 1 BAY LEAF, CINNAMON 2 PCS, CLOVES 3, STAR ANISE 1, MARATI MOKKU 1 IN 1 CUP WATER AND REFRIGERATE OVERNIGHT OR FOR 6 HOURS
  2. NEXT DAY REMOVE SPICES FROM WATER AND KEEP IT ASIDE TILL USE.
  3. DONT DISCARD WATER WE NEED IT FOR SOAKING RICE
  4. WASH 1 1/2 CUP ZEERA RICE OR BASMATHI RICE AND SOAK IN SPICES WATER FOR 1 HOUR.
  5. HEAT 2 TBLSP GHEE IN COOKER
  6. ADD SOAKED SPICES AND SAUTE IN LOW FLAME
  7. ADD CHOPPED 2 GREEN CHILLIES
  8. ADD 2 CHOPPED ONIONS
  9. ADD 2 TSP GINGER GARLIC PASTE AND SAUTE TILL RAW SMELL DISAPPEARS
  10. ADD TURMERIC POWDER 1/4 TSP, CHILLI POWDER 1 TSP, CURRY MASALA POWDER OR BRIYANI MASALA 1 TSP AND SAUTE FOR 1 MINUTE
  11. ADD SOAKED RICE WITH WATER ALONG WITH 1 CUP OF WATER, SALT AND MIX
  12. COOK FOR 2 WHISTLES
  13. WHEN DONE OPEN THE COOKER , ADD 1 TSP LEMON JUICE
  14. 1 TSP GHEE
  15. MIX GENTLY
  16. AND SERVE
  17. BOIL 3 CUPS OF WATER ,ADD 1 CUP SOYA CHUNKS
  18. KEEP THE VESSEL CLOSED FOR 5 MINS ,TILL CHUNKS DOUBLE IN SIZE
  19. DRAIN WATER AND WASH IN COLD WATER TWICE
  20. SQUEEZE WATER COMPLETELY
  21. ADD 2 TSP CORN FLOUR , 1 TSP CHILLI POWDER, 1 TSP CURRY MASALA POWDER ,SALT
  22. MIX WELL
  23. HEAT OIL AND DEEP FRY SOYA CHUNKS TILL CRISP
