Rava Rotti ( Udupi special Sajjige Roti)

Ingredients to make Rava Rotti ( Udupi special Sajjige Roti)

  • 2/3 cup semolina or rava
  • 1 tbsp finely chopped onions
  • 1 Tbsp Finely chopped coriander
  • 1 medium size carrot finely grated
  • 1/2 tsp finely chopped/grated ginger
  • 1 green chilli finely chopped
  • 1 tsp grated coconut
  • Salt as required
  • 2 heaped tbsp sour curd
  • 1 tbsp curry leaves finely chopped

How to make Rava Rotti ( Udupi special Sajjige Roti)

  1. In a bowl, mix the semolina, curd ,salt and 2/3 cup water and let it rest for 15 to 30 minutes.
  2. Add grated carrot, onions, ginger, chillies, coriander, curry leaves and coconut into semolina. Mix it well. Add some water so as to form a thick yet pouring consistency rava rotti batter.
  3. Heat a non stick pan. Drizzle some oil and spread it well using a cut potato or onion.
  4. When the pan is hot, lower the heat and pour a ladle of the rava rotti batter and spread it into a thin circular disc using the back of ladle. Cover it with a lid and cook for 1- 2 minutes on medium heat.
  5. Remove the lid and drizzle some oil along the sides and over the roti and cook till the base becomes brown and crispy and the sides begin to come out easily by using spatula.
  6. Flip the rotti and cook the other side for a minute or so till the rotti becomes crispy.
  7. Serve the rava rotti hot along with coconut chutney.
