Ingredients to make Chettinad Chicken

  • For marinade:
  • Chicken around 500 gm
  • Curd 3 tbsp
  • Turmeric powder 1/2 tsp
  • Red chilli powder 1/4 tsp
  • Ginger garlic paste 1 tbsp
  • Salt to taste
  • Lime 1
  • To roast and grind :
  • Grated coconut 2 tbsp
  • Cumin seeds 1/2 tsp
  • Coriander seeds 1 tbsp
  • Dry red chillies 3
  • Fennel Seeds 1 tsp
  • Black pepper corns 1/2 tsp
  • To saute:
  • 1 big onion chopped
  • 1 TOMATO CHOPPED
  • Garlic ginger paste 1/2 tablespoons
  • 1 small bayleaf , 1/2 inch cinnamon, 2 cloves , cardamons 1, few curry leaves
  • Salt to taste
  • Turmeric 1/4 tsp
  • oil

How to make Chettinad Chicken

  1. Marinade the chicken with the ingredients mentioned for marinade.
  2. Dry roast the ingredients mentioned till coconut is slightly browned.
  3. Cool the roasted ingredients and grind finely
  4. In a kadai take oil .Heat it and add bay leaves , cinnamon, cloves cardamoms.
  5. Then add chopped onions, garlic and curry leaves. Saute till onions are transparent light pink in colour , add tomatoes and other spices.
  6. Once tomatoes are mushy add in the chicken and saute for ten minutes.
  7. Now add ground masala and saute till raw smell leaves and chicken and spices are well blended.
  8. Add 1/2 cup water and cook till chicken is tender and oil floats on top.
  9. Garnish with coriander leaves. Serve hot with roti or rice
