ABOUT Chettinad Chicken RECIPE

This is a classic Indian recipe from the region of Chettinad in Tamilnadu. The roasted ground paste and inclusion of curry leaves make all the difference

Ingredients Serving: 4

  1. For marinade:
  2. Chicken around 500 gm
  3. Curd 3 tbsp
  4. Turmeric powder 1/2 tsp
  5. Red chilli powder 1/4 tsp
  6. Ginger garlic paste 1 tbsp
  7. Salt to taste
  8. Lime 1
  9. To roast and grind :
  10. Grated coconut 2 tbsp
  11. Cumin seeds 1/2 tsp
  12. Coriander seeds 1 tbsp
  13. Dry red chillies 3
  14. Fennel Seeds 1 tsp
  15. Black pepper corns 1/2 tsp
  16. To saute:
  17. 1 big onion chopped
  18. 1 TOMATO CHOPPED
  19. Garlic ginger paste 1/2 tablespoons
  20. 1 small bayleaf , 1/2 inch cinnamon, 2 cloves , cardamons 1, few curry leaves
  21. Salt to taste
  22. Turmeric 1/4 tsp
  23. oil

Instructions

  1. Marinade the chicken with the ingredients mentioned for marinade.
  2. Dry roast the ingredients mentioned till coconut is slightly browned.
  3. Cool the roasted ingredients and grind finely
  4. In a kadai take oil .Heat it and add bay leaves , cinnamon, cloves cardamoms.
  5. Then add chopped onions, garlic and curry leaves. Saute till onions are transparent light pink in colour , add tomatoes and other spices.
  6. Once tomatoes are mushy add in the chicken and saute for ten minutes.
  7. Now add ground masala and saute till raw smell leaves and chicken and spices are well blended.
  8. Add 1/2 cup water and cook till chicken is tender and oil floats on top.
  9. Garnish with coriander leaves. Serve hot with roti or rice
