Pineapple Kesari

Ingredients to make Pineapple Kesari

  • Fresh finely diced Pineapple - 100 gms
  • Water - 360 ml
  • Sugar - 130 gms
  • Rava/ semolina - 115 gms
  • Cashews - 12-15 nos
  • Ghee - 90 gms
  • Saffron strands for garnish (optional) - 2-3

How to make Pineapple Kesari

  1. In a pan combine water, sugar and pineapple and put it on a medium flame and let the mixture come to boil till you see little froth on the surface.
  2. In the meanwhile take another pan and heat the ghee. Once the ghee is hot, add rava and fry till golden brown and add cashews at this point and let them brown. Make sure you stir the mixture continously to avoid burning.
  3. Now add the pineapple mixture to the rava slowly and carefully as it will sizzle. Lower the flame and cook till all the water is absorbed.
  4. Serve hot and garnish saffron strands.

My Tip:

I personally like sweet on a medium side but if you prefer sweet on higher side , increase the sugar by 25 gms. Take into consideration the sweetness of pineapple when increasing the sugar amount. Try and choose a ripe yellow pineapple and not a very tangy one. You can dice the pieces according to the size you want but do not puree it, it changes the entire texture and flavour of the dish. You may feel that ghee is on higher side but be assured the dish needs the amount of ghee specified. You can add yellow colour if you want.
