Ingredients Serving: 5

  1. mutton 500 grams
  2. shallots 100 grams
  3. tomato 1
  4. ginger garlic paste 1 tablespoon
  5. curry leaves few
  6. Mutton Masala one tablespoon
  7. salt accordingly
  8. turmeric powder half teaspoon
  9. cinnamon 2 inches
  10. Cloves 2
  11. green cardamom 2
  12. star anise 2
  13. bay leaves 2
  14. fennel seeds 1 teaspoon
  15. kakhuskhus half teaspoon
  16. grated coconut half cup
  17. groundnut oil 50 ml
  18. ghee 1 teaspoon
  19. mustard seeds half teaspoon

Instructions

  1. WASH AND DRAIN 500 GMS OF MUTTON
  2. HEAT 2 TABLESPOONS OF OIL IN A PRESSURE COOKER
  3. ADD THE MUTTON
  4. SAUTE WELL
  5. ONCE MUTTON STARTS LEAVING WATER ADD ADEQUATE SALT
  6. ADD TURMERIC POWDER
  7. SAUTE WELL
  8. ADD 1TABLESPOON OF GINGERGARLIC PASTE
  9. ADD 1 TABLESPOON OF MUTTON MASALA( HOMEMADE)
  10. MIX WELL AND ADD 1 CUP OF WATER
  11. PRESSURE COOK FOR 6-8 WHISTLES
  12. IN A HANDI ADD 1 TABLESPOON OF OIL
  13. ADD WHOLE GARAM MASALA
  14. ADD 1-2 BAY LEAVES
  15. ADD 2 BROKEN CHILLIES
  16. ADD 1 CUP OF CHOPPED SHALLOTS
  17. ONCE IT TURNS PINK ADD 1 CHOPPED TOMATO
  18. SAUTE WELL
  19. ADD THE COOKED MUTTON PIECES ALONG WITH THE MASALA WATER IT WAS COOKED
  20. COOK COVERED IN MEDIUM FLAME FOR 5 MINUTES
  21. MEANWHILE MAKE A PASTE OF COCONUT,FENNEL,KHUSKHUS AND FEW CASHEWS
  22. ADD THE GROUND PASTE TO THE GRAVY
  23. COOK UNCOVERD FOR 5 MINUTES
  24. HEAT 1 TEASPOON OF GHEE IN A TADKA PAN
  25. ADD 1/2 TEASPOON MUSTARD AND FEW CURRY LEAVES
  26. ADD THE TEMPERING TO THE GRAVY. THIS FINAL TOUCH ENHANCES THE AROMA OF THE GRAVY.
  27. FINALLY GARNISH WITH FEW CURRY LEAVES
  28. CHETTINAD MUTTON MASALA IS READY TO BE SERVED WITH HOT STEAMED RICE,IDLT,DOSA OR ROTI
