Ingredients to make Veg Biryani

  • 1 & 1/2 cup - Basmati Rice
  • 1/2 cup - yogurt / dahi
  • 1 cup - Boiled Palak puree
  • 1/2 cup - Chopped Cabbage
  • 1/2 cup - grated Carrot
  • 1/2 cup - thinly sliced onions
  • 1/4 cup - bell pepper chopped (I took yellow)
  • 1 tbsp - garlic-ginger paste
  • 1/4 tsp - turmeric powder (haldi)
  • 1 tsp - Cumin seeds (jeera)
  • 1tsp- Garam Masala / Briyani masala
  • 2 tbsp - Oil
  • Salt according to taste
  • fried Cashew - garnish
  • Coriander - garnish
  • Paneer - Garnish (Optional)

How to make Veg Biryani

  1. Clean, wash and soak the rice for atleast 1 hour.
  2. Take water in a vessel& let it boil. Once the water starts boiling, add in the soaked rice. Cook the rice till it's cooked properly.
  3. Drain the rice in a colander, to get rid of extra water.
  4. For Bottom Layer: Heat the wok with oil, add turmeric powder, garam masala/ briyani masala then add Carrot, bell pepper, Add salt according to taste & cook for 2-3 minutes on high flame. Now add some Cooked rice in it, mix well & keep aside.
  5. For middle Layer: Heat the wok with oil, Jeera, garam masala/ briyani masala then add Cabbage. Add salt according to taste & cook for 2-3 minutes on high flame. Now add some Cooked rice in it, Mix well & keep aside.
  6. For Top Layer: Heat the wok with oil, Add Jeera, garam masala, ginger-garlic paste onions & cook till the onions are translucent in colour. Then add palak puree cook for 2-3 minutes on high flame & add cooked rice. Mix well.
  7. Now for Plating: Bottom layer, spread some yogurt, middle layer, spread some yogurt, then top layer. Garnish with some fried cashews & coriander.
My Tip: You can add any veggies of your choice like Last 2 layers. Serve it warm & Enjoy your Briyani.
