ABOUT Jaman (Andersay or Baked Gulab Jamun) RECIPE

In all over India we know that Gulab jamun is fried, dip in sugar syrup and much more sweet but in Karnataka I see specially in village area baked gulab jamun and called Andersay or Jaman.

Ingredients Serving: 4

  1. 1 cup Rice flour
  2. 1/2 cup Maida
  3. 1 tsp soda bi carbonate, 2 tsp chilled curd
  4. 1/4 cup butter or ghee for kneading dough (chilled)
  5. less than 1/4 cup chilled milk
  6. 1 1/2 cup sugar
  7. Dash of salt

Instructions

  1. In large pan, add maida and rice flour and curd mix well now add baking soda, and salt and knead hard dough with chilled milk and with butter. Use chilled water if required.
  2. Now let this dough rest for at least 1 hour. After an hour, again add chilled butter and again knead it and leave it for half an hour.
  3. After half an hour make small peda (dumpling) of it and place in flat aluminium plate and bake it in sand filled cooker for at least 45 minutes.
  4. Heat sugar in another pan and prepare one string syrup. After peda is done or cooked well, dip this all baked dumpling in sugar syrup and place separate in another bowl.
  5. When all are done, place them in air tight container and preserve it 7-10 days.
  6. It's so tasty and not too sweet. Also use it with ice cream, falooda and any liquid dessert.
