ABOUT Grangma's Lahori kadhi RECIPE

My grandmother used to make this Kadhi.In this recipe Golden fried onions and coriander leaves pakodi(fritters) are dipped in cooked gram flour and curd batter(mixture )which is cooked on medium flame for minimum 20 minutes.My grandmother learned this Kadhi from one of her friend who used to live in Lahore , that's why I named it as Grandma's Lahori Kadhi. This was one of my childhoods favourite Food used to eat with hot plain Rice.

Ingredients Serving: 4

  1. For the kadhi-
  2. Gram flour 1 cup
  3. Medium Sour curd 2cup
  4. Water 6 cups or as per requirement
  5. Salt to taste
  6. For the seasoning-
  7. Oil/ghee 4 tablespoon
  8. Small Mustard 1/2 teaspoon
  9. Fenugreek seeds/menthi 1 /4 tsp
  10. cumin/jeera 1 teaspoon
  11. Onion seeds 1/4teaspoon
  12. Asafoetida 1/4 teaspoon
  13. For the dry powder spices paste-
  14. Red chilli powder 1 teaspoon
  15. Turmeric powder 1/2 teaspoon
  16. Coriander powder 1/2teaspoon
  17. Ginger garlic paste 1teaspoon
  18. Water 2 tablespoon
  19. For the coriander fritters-
  20. Gram flour 1cup
  21. Salt to taste
  22. Red chilli powder 1/2teaspoon
  23. Turmeric powder 1/4teaspoon
  24. Chatmasala powder 1 teaspoon
  25. Water for making semisolid batter
  26. Baking soda a pinch
  27. Coriander leaves chopped 1/2cup
  28. Oil for frying fritters 200 ml
  29. Other ingredients -
  30. onions big size 2 (thinly sliced)
  31. Oil for frying(you can fry onions before shallow frying fritters

Instructions

  1. Make a Kadhi batter by mixing curd,gram flour, 6 cups water or as per requirement and salt to taste.
  2. Heat oil in a Pan add in all the whole seasoning spices saute for a while,make a paste of dry powder spices and ginger garlic paste with 2 tbsp of water,pour over seasoning slowly and cook until oil separates.
  3. Add in gramflour and curd batter in a Pan cook on high to medium flame for 20 minutes constantly stirring inbetween, make sure it should not stick at the bottom.
  4. Make fritters batter by adding gram flour, chilli powder, turmeric powder, salt to taste, chat masala powder, pinch of baking soda ,chopped coriander and add water to make a semisolid batter.
  5. Heat oil in a pan fry sliced onions until golden brown, take out and keep it aside.
  6. Add some more oil in a same pan if you require and shallow fry coriander fritters until golden brown and crispy .
  7. Add in fried brown onions and ready coriander fritters before serving if you want crispy or else you can cook for 5 minutes in the kadhi batter .
  8. Keep some fried brown onions and coriander fritters for garnishing.
  9. Now grandma's Lahori Kadhi is ready to serve. Garnish with fried onions and coriander fritters.
  10. Serve hot for lunch with plain Rice.
