Healthy Chicken & Barley Soup

Ingredients to make Healthy Chicken & Barley Soup

  • Chicken with bone bite size pieces 1 cup
  • Chicken stock 1 cup (you can use just water too)
  • Barley soak and boiled 1/2 cup
  • Green Peas 1/4 cup
  • Onions medium chopped 1
  • Tomatoes medium chopped 1
  • Carrots small cubed 1
  • Green chilies 2
  • Coriander leaves 2 tbsp
  • Mint leaves - 2 tbsp
  • Olive oil 1 tbsp (you can use regular cooking oil)
  • Ginger-garlic paste 1 tsp
  • Garam masala powder 1/2 tsp (use homemade for best results)
  • Black pepper powder 1/2 tsp
  • Turmeric powder 1/4 tsp
  • Salt to taste

How to make Healthy Chicken & Barley Soup

  1. Heat oil in a pressure cooker, add chopped onions and stir fry until soft. Add ginger garlic paste to it along with turmeric. salt and pepper.
  2. Add chicken pieces to it and saute on high flame for two minutes to seal the juices. Add barley, chicken stock, green chilies, tomatoes, peas and carrots and stir well.
  3. Pressure cook for 20 mins on low flame.
  4. Once it is cool, check to see the consistency. Add water to make it as soupy as your'd like. Add chopped coriander and mint leaves.
  5. Check for seasoning and sprinkle garam masala and let it simmer down for 5 mins more.
My Tip: This soup goes very well with tender mutton too.
