About Eggless Peanut Butter Cookies Recipe

Be it children or grownups everyone loves cookies and these eggless peanut butter cookies are no exceptions. Crunchy on the outside and chewy inside are simply delicious. Adapted from L.J.Bryan allrecipes.

Eggless Peanut Butter Cookies

Ingredients to make Eggless Peanut Butter Cookies

  • 1 cup unsalted butter
  • 1 cup crunchy peanut butter
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 1/2 cup buttermilk
  • 1 1/2 cups whole wheat flour, 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

How to make Eggless Peanut Butter Cookies

  1. Preheat oven to 190 degrees C. Line the cookie sheet with baking paper.
  2. Mix the unsalted butter, peanut butter, white sugar, brown sugar and buttermilk until smooth and fully combined.
  3. Add the flour, baking powder, baking soda and salt to the peanut butter mixture and mix until well blended. Do not over mix or the mixture will get aerated and the cookies will rise too much and flatten once cooled.
  4. Drop cookies 2 inches apart on lightly greased cookie sheet. Flatten with a fork that has been dipped in sugar. Bake at 190 degrees C for 10 to 12 minutes.

My Tip:

If you find the cookie dough too soft, keep it in the fridge for 15-20 minutes to firm up a bit. Increase the baking time to 15 minutes.
