ABOUT Kerala Drumstick Curry RECIPE

A flavourful curry which includes coconut, peanuts and fennel powder for the best aroma and taste .

Ingredients Serving: 3

  1. Drumstick long 2
  2. Onions medium 3 finely chopped
  3. Tomatoes ripe 2 big finely chopped
  4. Garlic crushed 1 tablespoon
  5. Green chillies 2 finely chopped
  6. Coconut oil 2 tablespoons
  7. Turmeric powder 1/4 teaspoon
  8. Garam masala powder 1 teaspoon
  9. Coriander powder 1/2 teaspoon
  10. Fennel / Saunf powder 1/2 teaspoon
  11. Salt 1 teaspoon
  12. For grinding :
  13. Coconut 1/2
  14. Peanuts 1 cup say 120 ml cup
  15. water for grinding as required
  16. Other Ingredients:
  17. Cilantros chopped for garnishing fistful
  18. Water 1/2 cup

Instructions

  1. Blend 1/2 coconut with 1 cup peanuts and little water .
  2. Heat 2 tbs coconut oil in a pot . Sauté 1 tbs crushed garlic , 2 chopped chillies,3 onions finely
  3. chopped until translucent. Add 2 mushy big tomatoes chopped finely . Sauté till soft .
  4. Add 1/4 tsp turmeric powder,1 tsp garam masala powder1/2 tsp coriander powder, 1/2tsp saunf powder.
  5. Add salt , cut drumstick pieces 15.
  6. Add little water . Sauté the masala . Cover and cook til masala oozes out .
  7. Check drumsticks are cooked . Then add ground coconut peanut mixture .
  8. Boil the curry till it bubbles to frothy state releasing aroma . Sprinkle chopped cilantros .
  9. Kerala Drumstick Curry is ready to serve with steamed rice / rotis / idlis .
