  • 1 tsp ginger and Green chilli paste
  • 1/2 tsp Haldi powder (turmeric)
  • 1 tsp salt (to taste)
  • 1 Cup water
  • 1 sachet of Eno fruit salt
  • 3-4 Green chillies cut into slits
  • 1/2 tsp White sesame seeds
  • 1 tsp mustard seeds
  • Pinch of hing (asafeotida)
  • Grated coconut (optional for garnish)
  • 8-10 curry leaves
  • 1 tbsp oil for tempering
  • 1 lemon (juice)
  • 1 tbsp sugar
  • For chutney; 2 tbsp raw peanuts, 4 Green chillies, 1/2 cup coriander, 1/2 lemon (juice) and Salt to taste.

How to make Instant Dhokla with Chutney

  1. In a bowl, take besan, rawa, curd, chilli ginger paste, salt, haldi and mix well by adding water. Thus forming a medium consistency batter, without any lumps.
  2. Keep it aside.
  3. Meanwhile, keep the steamer on the gas stove and add 2-3 cups of water.
  4. Grease a thali.
  5. When water is to boil, add eno fruit salt to the batter and mix slightly for few seconds and pour immediately in the thali and steam it for 12-15 minutes by covering it with the lid.
  6. Now, take 1/3rd cup Water, lime juice and sugar and boil. Keep it aside.
  7. After the dhoklas are steamed, remove the thali from the steamer and allow to cool.
  8. Cut the dhoklas diagonally into pieces.
  9. Spead the sugar-lemon-water mixture with the spoon all over the dhoklas.
  10. For tempering, heat oil and add mustard seeds, hing, sesame seeds, green chillies and lastly curry leaves. Temper dhokla with this.
  11. You can garnish dhoklas with fresh coriander and grated coconut.
  12. For chutney; grind peanuts, green chillies, coriander leaves, salt and lime juice and water.

My Tip:

Eno makes dhokla spongy and the sugar-lemon-water mixture makes it soft.
