Nimbu ki Achar

Ingredients to make Nimbu ki Achar

  • 40-50 lemons (thin skinned)
  • 1 cup Iodized salt
  • 1/2 cup Rock salt
  • 1/2 cup Black salt
  • 2 cups powdered sugar
  • 1/2 cup jeera powder
  • 1/2 cup red chilli powder
  • 2 tbsp Ajwain
  • 2 tbsp Garam masala (optional)

How to make Nimbu ki Achar

  1. Wash and dry all the lemons with a cloth properly.
  2. Cut a lemon into 8 equal pieces. Repeat for all.
  3. In a big vessel, add all the dry ingredients and mix properly.
  4. Now add lemons and mix it properly.
  5. Cover and tie the vessel with a thin muslin cloth.
  6. Keep this under the sun for 3-4 days.
  7. Transfer this in a air-tight glass jar and again keep it under the sun for 8-10 days, till the lemon skin turns tender and the color changes to light brown.
  8. Stir the pickle at least once a day till it is ready.
