Moist Chocolate Cupcakes with Perfect Chocolate Icing

Ingredients to make Moist Chocolate Cupcakes with Perfect Chocolate Icing

  • 1 cup self raising flour
  • 1/2 Cup Plain Flour
  • 1 cup sugar
  • 4 tbsp unsweetened cocoa
  • 1/2 tsp baking soda
  • 65g salted butter, melted
  • 1/2 Tsp Vanilla essence
  • 1 cup milk
  • For Chocolate Icing:
  • 1 cup Icing sugar
  • 2 tbsp unsweetened cocoa + 1 tbsp for dusting
  • 40g salted butter, softened
  • 1 tbsp milk

How to make Moist Chocolate Cupcakes with Perfect Chocolate Icing

  1. Preheat oven to 180 degrees C. Grease a cupcake tray or line with cupcake papers.
  2. In a large bowl combine all dry ingredients and mix well.
  3. After melting the butter, mix with dry ingredients.
  4. Combine milk and vanilla together, then add to dry ingredients.
  5. Spoon the mixture into the prepared cups, dividing evenly.
  6. Cook for about 20-25 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool on wire rack.
  8. Making Chocolate Icing:
  9. Sift icing sugar and cocoa together into a medium bowl. Add butter and milk.
  10. Using an electric mixer on low speed, mix until ingredients are combined. Increase speed to medium. Beat for a further 2 minutes.
  11. Spread icing over cupcakes and dust with cocoa.
