Eggless Muskmelon Cake

Ingredients to make Eggless Muskmelon Cake

  • maida - 1 ½ cups
  • Baking powder- - 2 tsps
  • Granulated sugar -1/2 cup (100 gms)
  • butter -1/2 cup (100 gms)
  • curd - 75 gms
  • Muskmelon puree - 1 ¼ cups
  • White chocolate - 100 gms
  • Dark chocolate - 100 gms
  • mango chocolate - 100 gms
  • Few drops of pineapple essence(oil base)
  • sugar sprinkles

How to make Eggless Muskmelon Cake

  1. Preheat oven to 180 degree C.
  2. Sieve the flour and baking powder together and set aside.
  3. Grease and dust with maida a bunt cake mould.
  4. Cream the sugar and butter until creamy.
  5. Add curd and beat them.
  6. Add the dry ingredients in two parts to the butter mixture, alternating twice with the melon purée mix it well.. (mix the batter on medium-high for about 2 to 3 minutes)
  7. Pour the batter into a greased and floured cake pan. Bake for 4o to 45 minutes, or till the cake is done.( to check the doneness of the cake insert a tooth pick in the middle of the cake it should come out clean.)
  8. Cool the cake in its pan for 10 min., then turn it out onto a rack.
  9. In a double boiler or microwave .melt the white chocolate, mango chocolate and the dark chocolate separately
  10. Add 2 drops of pineapple essence and mix it.
  11. Pour the melted chocolate over the warm cake.
  12. Eggless Musk Melon Cake is ready to serve.
