ABOUT Stuffed Potatoes in Yoghurt Spinach Gravy RECIPE

This recipe of mine is entirely my own innovation ..I made it for the very first time and it came out to be superdelicious with shallow fried stuffed potatoes in mint potatoes filling infused in yoghurt spinach gravy..I am sure you are going to enjoy and relish this healthy yoghurt based recipe.

Ingredients Serving: 4

  1. Potatoes 4 medium sized
  2. Mint coriander home made chutney 1 Table spoon
  3. Greek yoghurt 250 ml
  4. Spinach frozen and shredded 200g
  5. Ginger-Garlic grated 1 tablespoon
  6. Onion 2 medium sized
  7. Cashew nuts 30g preroasted
  8. Vegetable oil 2 table spoon
  9. Cumin 10g
  10. Bay leaf one
  11. Red chillies whole 2-3
  12. Turmeric 1/2 teaspoon
  13. salt as per taste
  14. Garam masala 1/2 teaspoon
  15. Asafoetida (heeng) a pinch
  16. Kasmiri mirch powder 1/2 teaspoon
  17. Coriander leaves . 10 g for garnishing
  18. Cherries 3-4 for garnishing

Instructions

  1. Boil potatoes.peel off the skin .Cut them into two halves ,Scoop out from the centre and take out the remnants of potato .
  2. Shallow fry the hollow potatoes now for 5 -7 minutes .
  3. Take them out from the wok once they turn golden brown and let them cool ..
  4. Prepare the stuffing by mashing those remnants of potatoes which we had scooped out .Add mint coriander home made chutney , kashmiri mirch , salt , chopped onions one into it and mix it thoroughly .
  5. Now fill the hollow potatoes with this and stuff it properly .please press it properly inside . Keep them aside.
  6. Meanwhile take the frozen chopped spinach ..Thaw it and now keep it in the microwave mode for 15 minutes for becoming soft and tender . Add little oil and a pinch of Asafoetida in the spinach .
  7. The spinach becomes tender in the microwave ..Allow it to cool
  8. Now add this to whipped yoghurt and mix it thoroughly .
  9. Now we have to make masala for the tempering .For this take a wok add oil .Let it heat up on the medium flame . Add bay leaf , whole red chillies , cumin and allow them to splutter..for 2-3 minutes .
  10. Add chopped onions and grated ginger garlic paste ..Roast all till the raw smell disappears.Add salt too .
  11. Add all the dry spices including turmeric and keep stirring on low flame now .
  12. Now Add slowly the Yoghurt-Spinach mixture ..Stir it throughly .
  13. Allow it to simmer for for 7 -8 minutes and then add the stuffed potatoes into this delicious aromatic curd-Spinach gravy .. Also add preroasted cashew to give a royal touch and nutty flavour to the gravy.
  14. Keep it on low flame for another 5 minutes . Take out in the plate now.
  15. Garnish it with shredded coriander leaves.Sprinkle little garam masala on the gravy veggy also garnish with red cherries ..Enjoy this veggy with plain rice or rotis or paranthas ..Happy eating
