Ingredients to make Lemon Cheesecake

  • Cottage cheese (paneer) 200 gms
  • Cream 200 gms
  • Condensed milk 1 tin (200gms)
  • Gelatine 4 tsp
  • Butter 50 gms
  • Marie biscuits about 12-14 pieces
  • Lemon rind 1 tsp
  • Lemon juice 1 tbsp
  • Water 2 tbsp

How to make Lemon Cheesecake

  1. Take ½ tbsp. of water and soak gelatine. Leave this to swell. By that time crush biscuits to fine crumb consistency. Mix it with melted butter and spread on a dish, which you have chosen to set the dessert. Microwave this for 1.5-2 minutes
  2. Using a flat spatula, press these hot crumbs to the bottom of a dish. Leave this in fridge until the base turns hard.
  3. Crumble cottage cheese and add it to mixer along with condensed milk. Pulse and remove into a bowl. To this add cream, lemon juice and gelatine. Combine well. Add in lemon rinds.
  4. Pour this cheesecake mixture on well set base of biscuit-butter layer. Sprinkle those remaining lemon rinds and cover the dish.
  5. Transfer this to the top section of the fridge to set completely. Decorate with lemon jelly or marmalade. It can also be served with lemon curd.
My Tip: I personally like to top the cheese cake with an orange marmalade for an extra tangy taste.
