ABOUT Rice kheer with leftover mithai RECIPE

Had a box of mawa pedha in house which no one was interested in finishing. This is quiet a frequent occurrence in my house. So this idea of making kheer with mithai cropped in my mind. This is a good way to finish with your mithai and also to show off your culinary expertise with minimal effect but maximal taste. Believe me, it got finished like hot cakes in my workplace as well as in neighbourhood with flow of compliments.. It does is a worth preparation for your guest parties.

Ingredients Serving: 4

  1. Rice 1 cup broken variety is preffered
  2. Sugar 1/4th cup
  3. Pedha 250-300
  4. Milk 3 cups
  5. Ghee 2 teaspoon
  6. Dry fruits of your choice 2 tablespoon. I have used cashew, almond, pistachio powder and charoli seeds
  7. Nutmeg and cardamom powder 1/2 teaspoon
  8. Saffron strands for garnishing

Instructions

  1. Soak rice for minimum 15 minutes
  2. Heat ghee in a vessel
  3. Roast dry fruits in ghee. I have used few halves of cashew and powder as I have a small kid. You can use cut dry fruits also.
  4. Now roast rice in ghee till it gets brownish
  5. Now add crushed mawa mithai
  6. Once it gets heated, it forma a fine mixture with rice. Keep it stirring on low flame
  7. Now add sugar. Adjust sugar as per sweetness of mithai. You need to add very less sugar than usual kheer.
  8. Keep in stirring till sugar melts
  9. Now add milk and mix well and let it cook on low flame.
  10. Add charoli. This is optional, however this gives a nice taste to sweets like rabdi and basundi hence worth adding if available.
  11. Let the milk boil and rice get cooked till soft
  12. This may take a while. Let rice get cooked slowly over low flame. Keep on stirring in between. Add more milk if required.
  13. Add nutmeg and cardamom powder.
  14. Mix well and serve cold
