Ingredients Serving: 5

  1. 1cup maida
  2. 3/4 cup Rawa
  3. 1 cup buttermilk
  4. 1 cup Castor Sugar
  5. 1tsp Vanilla essence
  6. 1 tbsp Lime juice
  7. 3tbsps pineapple compote
  8. Lemon zest
  9. 1/4 cup thick curd
  10. 1/2 cup oil
  11. 2 Pinches Salt
  12. 1tsp baking soda
  13. 2 tsp baking powder
  14. 1/2 cup boiling water

Instructions

  1. Soak rawa in buttermilk for 15 mins.
  2. Sieve baking powder, baking soda, maida and salt.
  3. To the curd add sugar and whisk it till sugar dissolves.
  4. Add pineapple compote, essence and whisk again.
  5. Add rawa mix and the sieved maida.
  6. Gently fold. Add the lemon juice /vinegar, zest and hot water.
  7. Gently fold and put it in a greased pan.
  8. Bake in a pre heated oven at 180 degrees for 45 mins.
