ABOUT Coconut Almond Cookies RECIPE

Coconut Almond cookies are super crunchy, perfect to the bite, slightly sweet. These super crunchy cookies are eggless, simple to make, just mix the dough and bake. They go in the oven and come out smelling so good. Initially they were soft, but once they cooled down they turned crunchy. These cookies reminded me of the cookies I used to have as a kid. Can be a great treat for kids snack. Made a few changes to the recipe is adapted from Archana’s kitchen.

Ingredients Serving: 6

  1. Almond powder ¼ cup
  2. All-purpose flour ¾ cup
  3. Unsweetened desiccated coconut ¼ cup
  4. Butter 3 tbsp (@ room temperature)
  5. Ghee 2 tsp
  6. Brown sugar ¾ cup
  7. Salt 1 pinch
  8. Baking soda ¼ tsp + 2 pinches
  9. Milk 3 tbsp
  10. white granulated sugar 3 tsp

Instructions

  1. Preheat the oven at 350 deg F. Combine the butter, ghee and sugar in a bowl, mix well using a fork. Mix in the unsweetened desiccated coconut and almond powder. Now add the flour, baking soda, salt and milk.
  2. Knead all the ingredients till a soft dough is formed. Scoop small portions of the dough and place them 1 inch apart on a silicon baking mat or parchment paper. Press the dough gently and sprinkle some white sugar granules on them.
  3. Bake these cookies in the oven for 15 mins. Remove and let them cool on a cooling rack. Enjoy the crunchy coconut almond cookies with tea/coffee or just an snack anytime of the day.
