ABOUT Mango Pilaf RECIPE

I wanted to try a savoury dish with mango but was very skeptical as always used to having mango as sweet dish. This dish proved me wrong its bursting with tangy & spicy flavours.

Ingredients Serving: 3

  1. 1 cup basmati rice
  2. 1 cup mango puree
  3. 1 tbsp coconut oil
  4. 1 tsp mustard seed
  5. 1 sprig curry leaves
  6. 1/4 tsp turmeric powder
  7. 1 capsicum
  8. 1/2 tsp biryani/garam masala
  9. 1/2 cup cashews

Instructions

  1. Soak rice for half an hour & make mango puree.
  2. Heat oil in a saucepan. Add mustard seeds when they crackle add curry leaves & capsicum
  3. Cook for a minute. Add rice & saute for a minute
  4. Add mango puree, turmeric, salt, cashew, masala & water
  5. Bring to boil &lower the heat, put on a tight lid & cook for 10 minutes
  6. After removing from heat let rice stand for 10 minutes before opening the lid
