ABOUT Mango Pan Cake RECIPE

A unique dish from Thai cuisine, this features soft and fresh pancakes stuffed with a superb mix of mangoes and coconut sweetened mildly with sugar and bound together by fresh cream

Ingredients Serving: 6

  1. 1/4 cup maida
  2. 1/4 cup cornflour
  3. 1/4 cup Milk
  4. 1/8 tsp salt
  5. 2 tbsp Butter
  6. 1 cup chopped mangoes
  7. 2 tbsp grated coconut
  8. 1,/2 cup fresh cream
  9. 2 tbsp powdered sugar

Instructions

  1. For pancakes combine maida, cornflour, salt with 1/4 cup of water in a deep bowl and mix very well, no limbs remain using a whisk.
  2. Grease the pan, pour 2 tbsp of batter till the pan around quickly so that the batter coats the pan evenly.
  3. Smear a little butter on the sides and when sides starts to peel off, turn the pancake around and cook on the other side for 30 seconds.
  4. In a deep bowl add mangoes, coconut, fresh cream and powdered sugar and mix it gently. Divide the mango filling in 6 portion.
  5. Place a pan cake on a flat plate, place a portion of the stuffing on one side of the pan cake and fold it over it to make a semi circle. ( Make 5 more pan cake with same procedure)
  6. Serve immediately.
