This cake recipe is very easy to make, quick & very simple ingredients used. The best part of the recipe is, it is baked in a pressure cooker without oven.

Ingredients Serving: 5

  1. 1 cup mango pulp (Alfanhso)
  2. 1 cup fine semolina/rava
  3. 3/4 Cup Powdered Sugar
  4. 1/4 cup unsalted butter
  5. 1 tsp Baking powder
  6. 1/4 tsp Salt
  7. 1/4 tsp cardmom pd (or vanilla essence)
  8. 1tbsp cashewnuts chopped
  9. Few mango pieces for garnishing

Instructions

  1. In a bowl add fine semolina, mango pulp, powdered sugar, butter, salt, cardamom pd & mix well.
  2. Cover & keep aside for 15mins
  3. After 15 mins add baking powder in prepared mixture, mix well
  4. Pour the cake batter in greased & lined 6inch tin
  5. Spread evenly
  6. Sprinkle over it cashewnuts & mango pieces
  7. Tap tin for 2-3times
  8. preheat cooker for 10mins
  9. Place a ring & bake in a preheated pressure cooker for 35 -40mins on medium flame
  10. Check with tooth pick, if toothpick comes out clean then the mango cake is perfectly done. If not then bake for another 8-10mins on medium flame.
  11. Take out from cooker nd allow to cool for 30-40 mins on a wire rack
  12. Demould when completely cooled in room temperature.
  13. Soft & moist cake is ready
