ABOUT Chicken cutlets RECIPE

The cutlet is to the Parsis what paranthas are to Punjabis– integral to their diet and a common accompaniment with their meals.

Ingredients Serving: 4

  1. Chicken mince-500gms
  2. Garam masala-1 tsp
  3. Green chillies-2 chopped
  4. Bread slices- 2 (soak and squeeze then mash well)
  5. Eggs-4
  6. Bread crumbs for coating
  7. Coriander leaves-1/2 cup chopped
  8. Ginger garlic paste-1/2 tsp
  9. Oil for frying
  10. Salt and black pepper to taste

Instructions

  1. In a large bowl combine the chicken mince, ginger garlic paste, coriander leaves, garam masala and chopped green chillies.Mix well.
  2. Now add the slices of bread and 2 eggs.Season with salt and pepper and mix thoroughly with a fork.
  3. Crack the remaining 2 eggs in a bowl and season with salt and pepper.
  4. Shape the mince mixture into round patties, and dip in the beaten egg, then coat with the breadcrumbs. Make all the patties/cutlets this way and keep aside.
  5. Refrigerate cutlets for 30 minutes for better results.
  6. Heat oil in a kadhai/pan over medium heat. Lower in the cutlets in small batches and fry on medium heat only till golden outside and cooked on the inside.You can shallow fry/ deep fry as per your wish.
  7. Drain well on paper towels and serve hot.
