ABOUT Vada Pav Bruschetta RECIPE

Bruschetta is an italian starter recipe but here I gave indian twist to this recipe. I am pretty much sure you will make this recipe again and again once tasted.

Ingredients Serving: 4

  1. Boiled Potatoes – 2 (Peeled and partially mashed)
  2. Green Chilli Paste – 1 teaspoon
  3. Turmeric Powder – ½ teaspoon
  4. Salt – to taste
  5. Ginger & Garlic Paste – 1 teaspoon
  6. Coriander Leaves – a handful (chopped)
  7. Red Chilli Powder – to taste
  8. Garam Masala – ½ teaspoon
  9. Lemon Juice – 1 ½ teaspoon
  10. Oil – 1 tablespoon
  11. Mustard Seeds – ½ teaspoon
  12. Cumin Seeds – ½ teaspoon
  13. Asafoetida – a pinch
  14. Curry Leaves – 4-5
  15. Butter – as required
  16. Pav – 4
  17. Shredded Mozzarella or Cheddar Cheese – 1 Cup (I used half mozzarella and half cheddar cheese)
  18. Red Chilli Flakes – as required
  19. Basil – 4 to 5 leaves (chopped)
  20. Dried Oregano Leaves – as required

Instructions

  1. Heat oil in a pan. Add mustard seeds and cumin seeds. When they crackle add asafoetida and curry leaves.
  2. Now add green chilli paste and ginger & garlic paste. Saute it for few seconds.
  3. Add turmeric powder, mashed potatoes, red chilli powder, garam masala, salt. Mix well.
  4. Add lemon juice and chopped coriander into it.
  5. Turn off the heat and transfer the potato mixture into a bowl.
  6. Cut the pav into ½ inch slices.
  7. Spread some butter over the each slice of pav and arrange all slices on a baking tray. Put it into the preheated 400 F oven for 5 to 7 minutes.
  8. Now place some potato mixture, cheese over each slice of pav.
  9. Sprinkle red chilli flakes, basil leaves, oregano leaves over them.
  10. Put the tray into the oven again until the cheese has melted.
  11. Transfer the Vada Pav Bruschetta into a serving plate and serve immediately
