ABOUT Basbousa - Eggless Cake RECIPE

Basbousa is an Egyptian Semolina cake made with coconut, rose water, sugar syrup it is an eggless cake, topped with Almonds is truly delicious and easy to make.Cake recipe taken from Jayshree Nishchal.

Ingredients Serving: 10

  1. 1-Baking equipment used- one square rectangle baking dish can be made in round dish too
  2. 2-For Sugar Syrup -
  3. ButterSugar 2 cups ( 400gms)
  4. Water. 1 1/2 cup( 375)
  5. Lemon Juice. 1Tblsp
  6. Rose water. 1 Tsp
  7. 3-For Cake-
  8. Suji - 500 gms - 3 cups
  9. Sugar. -100gms -1/2 cup
  10. Baking powder. -3/4 th tsp
  11. 100gms or 1/3 cup of hot sugar syrup( from d syrup made with above mentioned ingredients)
  12. Luke warm milk 1.5 Tblsp less than 1 cup ( 225)
  13. Almonds blanced 15- 20
  14. Butter to greased pan
  15. Butter. - 110 gms melted 1/2 cup

Instructions

  1. 1-First make the sugar syrup,add sugar and water in apot n bring to boil ,once it starts boiling add lemon juice to it,boil it for another 2 minutes,Switch off the flame and add rose water to it.
  2. 2-In a big bowl add semolina,desiccated coconut,sugar and baking powder mix them.
  3. 3-Add melted butter and 100 gms of sugar syrup prepared as above,mix them to just combine.
  4. 4-Add lukewarm milk to it ,mix everything together don' t overmix.
  5. 5-Grease a baking dish with butter,spread the mixture evenly into the greased baking dish use ur hands to press gently to form a smooth top.Cover the dish with cling film and keep it at room temp.for 4-6 hours.
  6. 6-Preheat oven at 180 d celcius
  7. 7-Cut the basbousa into diamond shape with a sharp knife dipped into the water.Place blanched almonds on every diamond shape and press gently.
  8. 8-Bake the Basbousa in preheated oven for 20- 25 minutes until done.
  9. 9-To get the golden colour on thetop broil them( afterbake)untill thegrill for 2-3 minutes or until u see a nice golden crust on top.
  10. 10-Pour the cold syrup on Basbousa as soon as it comesout of the oven.Let it cool and soak all the surup before serving.
  11. 11-Enjoy an Egyptian semolina cake
