About Malabar Nei Choru / Ghee rice Recipe

Malabar , is ever popular for its delicacies . This Nei Choru is a traditional delight of Malabari Muslim community. Any celebrations , weddings wouldn’t fail to have Nei Choru in their menu. This Nei Choru is so light on the stomach wanting to relish few extra morsels .

Malabar Nei Choru / Ghee rice

Ingredients to make Malabar Nei Choru / Ghee rice

  • Basmati rice 3 cups soaked for 15 minutes
  • ghee 3 tablespoons + 1/4 cup
  • green chillies 2
  • onions medium sized 3 thinly sliced
  • bay leaves 3
  • Green cardamom 4
  • cinnamon stick large 1
  • cloves 4
  • cashew nut 3/4 cup
  • Golden raisins 1/2 cup
  • salt 2.5 teaspoons or as preferred .
  • water 3 Cups
  • cilantros chopped for garnishing 2 tablespoons

How to make Malabar Nei Choru / Ghee rice

  1. Heat 3 tablespoons ghee in a pot .
  2. Fry 3 bay leaves,2 green chillies, Cinnamon large 1 stick , cashews , cloves 4.
  3. Add raisins fistful and 4 green cardamoms . Fry gently .
  4. Add 3 cups water to the pot . Allow the water to boil .
  5. When the water starts boiling ,
  6. add 3 cups pre-soaked, drained basmati / kaima rice . Add sugar as required . Stir gently. Cover
  7. and cook . In another pan , heat 1/4 cup ghee , add 3 medium onions thinly sliced , salt.Fry until
  8. brown.While rice is cooking,add half of the fried onions +ghee and spread.Cover and cook the rice
  9. for 10 minutes in medium heat . Add fistful cashews and extra raisins to the hot fried onions .
  10. Toss quickly in the heat . Keep aside . Rice is cooked with an amazing aroma .
  11. Fluff it up with a fork .
  12. Add the reserved fried onions, fried cashews , raisins with ghee . Spread. Toss gently from down
  13. to up . Sprinkle chopped cilantros .
  14. Malabar Nei Choru / Ghee rice is ready to serve . Serve hot with any spicy curries .
