ABOUT Butter scotch pudding RECIPE

Delecious creamy pudding with a string caramel flavour.

Ingredients Serving: 3

  1. Butter 1/2 cup
  2. Sugar 3/4 cup
  3. Milk 2 cups
  4. Vannilla essence 1 teaspoon
  5. Gelatin 3 teaspoon
  6. Nuts
  7. Sugar 2 tablespoon
  8. Water 2 tablespoon

Instructions

  1. For garnish : Heat a pan add 2 tablespoon sugar and 1/2 teaspoon water and caramelise it. When it turns yellow add the chopped nuts and mix , transfer to parchment paper when it is golden colour. when it is cooled either crush or powder it.
  2. Blooming gelatin: From milk take1/4 cup add gelatin and mix well.
  3. Butterscotch sauce: Heat a thick bottom pan add the sugar along with remaining water and caramelise it at low to medium flame. Remove from flame when it is golden colour and add butter and mix well. Reserve 2 tablespoon of this sauce for garnish
  4. Pudding mix : Pour milk to the sauce , it will harden dont worry ,place it on flame and stir well until it melts completely.Add vanilla essence when it boils and add condensed milk.Along this melt the gelatin by double boiling it . Pour this to the milk and cook until it thicken slightly.When it cools pour this to a mould or a tray and refrigerate for 4 hrs.
  5. Assembling: Demould it and pour the reserved butterscotch sauce and add the nuts. serve it cool.
