About Chha Gosht Recipe

A Himachali traditional dish which is a must to relish for hardcore non vegetarians . In this style , meat is marinated for hours and boiled along with roasted gram flour , red chilli flakes ,asafoetida and fresh spices . Indeed a crowd pleaser .

Chha Gosht

Ingredients to make Chha Gosht

  • For Marination :
  • Mutton 1/4 Kilogram
  • ginger garlic paste 1 teaspoon
  • salt 1 teaspoon
  • bay leaves 2
  • cinnamon powder 1 teaspoon
  • cloves 5
  • Green cardamom 3
  • black cardamom 2
  • curd 1 cup
  • For Curry :
  • mustard oil 3 tablespoons
  • green chillies 2
  • Dried red chillies 3
  • salt 3/4 teaspoon or as required
  • gram flour 3 tablespoons
  • ginger finely chopped 1 teaspoon
  • water 1 cup + 1/2 cup
  • red chilli flakes 1 tablespoon + 1 teaspoon for garnishing
  • coriander powder 3/4 teaspoon
  • onion 1 big thinly sliced
  • asafoetida powder 1/4 teaspoon
  • cilantros finely chopped fistful

How to make Chha Gosht

  1. Take 2 bay leaves , 3 green cardamom,2black cardamom, 5 cloves in a mortar .
  2. Crush it manually to a coarse powder . Keep aside .
  3. Take 1/4 kg mutton. Add 1 teaspoon ginger garlic paste .
  4. Add 1 teaspoon salt .
  5. Add 1 teaspoon cinnamon powder freshly powdered .
  6. Add the prepared spice powder .
  7. Add 1 cup curd .
  8. Mix all manually. Marinate mutton for minimum 2 hours . Preferably refrigerate .
  9. Heat 3 tablespoons mustard oil till smoking point .
  10. Add 2 chopped green chillies.
  11. Add 3 dried red chillies.
  12. Add 1 big onion thinly sliced . Sauté until light brown .
  13. Add 1 teaspoon finely chopped ginger . Sauté until aroma releases.
  14. Add 1/4 teaspoon asafoetida.
  15. Add 3/4 teaspoon coriander powder .
  16. Add 1 tablespoon red chilli flakes.
  17. Add the marinated mutton along with curd .
  18. Fry the meat in high heat until meat turns colour . Keep searing now and then .
  19. Add 1 cup water .
  20. Cover and cook for 10 minutes .
  21. Meantime , dry roast 3 tablespoons gram flour until raw smell leaves.
  22. Add the roasted flour to the meat .
  23. Mix and add 1/2 cup water .
  24. Add salt 3/4 teaspoon or as required .
  25. Cover and cook the meat till tender . Once done , cook opened for 3 minutes in high .
  26. Add fistful chopped cilantros . Garnish with a teaspoon of red chilli flakes .
  27. Traditional Himachali Chha Gosht is ready to serve .
