ABOUT Easiest Chocolate pudding - eggless RECIPE

This is the easiest, quickest chocolate pudding (Adapted from Mark Bittman's "How to cook everything" book). Ever. And you won't believe the surprise ingredient in it. Just blend all ingredient together and chill. It is really as simple as that. This chocolate pudding is so simple and so fast it’s perfect as a last-minute dessert for those hurried, un-planned events which is how it always is for me. Make this chocolate pudding for your next dinner party or a weekend treat. Enjoy!

Ingredients Serving: 12

  1. Paneer/Cottage cheese - 400 gm
  2. Melted chocolate (Bittersweet or semisweet) chopped– 200 gm
  3. Sugar syrup – 1 cup
  4. Vanilla Essence – 1 tsp
  5. Gelatin - 1 tsp (optional - I reckon it'll set just as well without gelatin. But I didn't want to take chances)
  6. Grated chocolate – 20 gm (for garnish)

Instructions

  1. Melt chocolate in a double boiler. Set aside to cool.
  2. Combine one cup sugar and one cup water in a pan and let it come to a boil. Let it boil for 1-2 minutes by which time the water would have turned syrupy and sticky to the touch. The sugar syrup won’t be thick. It need not be. Switch off.
  3. Let sugar syrup cool.
  4. In a small bowl, take one tablespoon of water and add the gelatin. Let stand for a minute. Then microwave or place inside a pan of simmering water and stir till the gelatin dissolves. Set aside.
  5. In a mixie/blender, blend together the paneer/tofu, melted chocolate, vanilla essence and sugar syrup till smooth.
  6. Add the sugar syrup a little at a time to adjust the consistency of the pudding especially if you’re not going to add gelatin. Once the mixture is smooth, add the gelatin and blend again.
  7. Pour into individual serving dishes and chill for 4 hours. Top with grated chocolate and chill till serving time. Enjoy.
