ABOUT Malai Sandwich RECIPE

A nice dessert sandwich made using malai.

Ingredients Serving: 6

  1. Milk 1/2 litre
  2. Citric acid crystals 1/4 tsp
  3. Sugar 2 cups
  4. Water 3 Cups
  5. Mava/ dried whole milk 50 gms
  6. Yellow food colour
  7. Saffron strands for decoration

Instructions

  1. Dissolve citric acid crystals in water and keep aside.
  2. Bring the milk to boil, reduce the flame.
  3. Add citric acid solution to boiled milk gradually to get soft paneer. Dont add everything together.
  4. You will see greenish whey (in case if you dont see greenish whey and feel that more curdling is required then you may make more solution and add very slowly )
  5. Once the milk is curdled turn off the flame, add 1 cup of cold water in it and keep covered for 15 minutes.
  6. Pour curdled milk into muslin cloth and tie it above the sink for about 15 minutes so that the whey gets drained easily. Gently squeeze the bag. Make sure that all the whey has drained out.
  7. Place chenna (paneer) on a plain working surface and knead with the heal of the hand til the grains disappear and chenna becomes soft and creamy.
  8. Divide the mixture into 15 portions (depending on the size of sandwich you want. I made small sandwiches. They double up on cooking in the syrup).
  9. Make desired shape. Here i have made square ones.
  10. In the pressure cooker add 1 cup of sugar and 3 cups of water and bring to a boil on high heat stirring inbetween till all sugar is dissolved.
  11. Carefully place chenna squares in syrup one by one. - close cooker and put whistle. - keep on medium flame till 1 whistle and then reduce heat to simmer and cook for about 7 minutes.
  12. Switch off the flame and allow the cooker to cool.
  13. You will see that chenna squares will double up in size (use wide size cooker). -remove squares from the sugar syrup.
  14. Add remaining 1 cup of sugar in the syrup. Bring it to boil.
  15. Let it cool for 30 minutes.
  16. Now add squares into the syrup. Keep for around 30 minutes.
  17. Meanwhile knead mava. Add little bit of sugar syrup and 1 drop of yellow food colour. Knead well.
  18. After 30 minutes take the chenna squares out of the syrup. Squeeze them little and carefully cut them horizontally.
  19. You have to be very careful while cutting because they are very soft and can break easily. Do not apply pressure on the middle part of the square or else they will break.
  20. Apply sufficient amount of mava on one half of the square and place the other half on it just like in a sandwich.
  21. Decorate with saffron strands and cut into triangles if you want.
