Mango Biscuit Pudding is an easy and fast to make mango dessert.Mango Pudding is not too sweet or heavy.

Ingredients Serving: 1

  1. For custard powder:-
  2. 1/4 cup milk powder
  3. 1 cup powdered sugar
  4. 1/4 cup cornflour
  5. 1 teaspoon vanilla essence
  6. For mango custard:-
  7. 250 ml milk
  8. 100 gram sugar
  9. 30 gram custard powder
  10. 2 ripe sweet mango
  11. 1/2 cup hot Milk
  12. 5-6 saffron strands
  13. 1-2 drops of yellow food color
  14. For mango biscuit pudding:-
  15. 2 cups mango custard
  16. 8 digestive biscuits
  17. 2 teaspoon butter
  18. 2 teaspoon powdered sugar
  19. 1 sliced sweet and ripe banana for layering
  20. 4-5 straight pieces of ripe sweet mango for garnishing

Instructions

  1. For custard powder: In a mixing bowl,add milk powder,corn flour and powdered sugar
  2. Now add vanilla essence and mix well.
  3. Grind mixture to fine powder
  4. Keep custard powder aside
  5. For mango custard: Add 1/2 cup hot milk and 5-6 saffron strands in a bowl
  6. Boil 250 ml of milk for 10 minutes , add sugar and mix well
  7. Now add saffron milk and custard powder. Keep stirring until lump free
  8. Now add yellow food color and mix well. Cook stirring occasionally till custard thickens
  9. Cool custard to room temperature
  10. Peel and roughly chop the mangoes.
  11. Blend mangoes to a smooth puree .
  12. Add mango puree into custard and mix well
  13. Crush biscuits to coarse powder.
  14. Add 2 teaspoon butter , 2 teaspoon powdered sugar to biscuit powder and mix well
  15. For Assembling: Layer biscuit powder mix at the bottom of serving glass.
  16. Now pour the mango custard over it.
  17. Layer banana slices on top
  18. Spread biscuit mixture evenly over bananas
  19. Finally pour the mango custard over it and fill the glass.
  20. Refrigerate pudding for 1 hour.
  21. Garnish with straight pieces of sweet ripe mango and leftover biscuit powder mix.
  22. Serve Chilled.
