Making coconut milk at home is as easy as pie. All you need is some fresh coconut, water and a mixer grinder.

Crack open the coconut shell. Remove the fruit from it and grate into onto a plate.
In a bowl, pour 1 cup of water and set it aside for 10 minutes.
Then, pour it all into a blender and grind it all together.
Using a muslin cloth over a sieve, pour this ground mixture into it. Squeeze out all the coconut milk from the muslin cloth. This is your thick coconut milk.
Again, remove the coconut onto a bowl and pour in 1 cup of water. Set it aside for 10 minutes.
Grind in a blender. Pour into a strainer with a muslin cloth over it. Squeeze out all the coconut milk. This milk will be noticeably thinner. This is your second press and this is thin coconut milk.

perfecto! down home in Tanzania, the locals cook most of their veggies n lentils in coconut milk. ....however they squeeze out the milk with their hands by adding little water at a time. they cook the rice too in it.
