ABOUT Wheat Flour Fried Sweet Spirals RECIPE

No yeast no maida no baking soda .Traditional jalebi recipe with little innovation sinfully sweet and delicious, spiral shaped Indian funnel cake is an addictive festive sweet. These crispy and crunchy Jalebies best when dipped in cold rabdi or milk.

Ingredients Serving: 3

  1. 2 cups Wheat flour
  2. 1 tablespoon Cornstarch/Cornflour
  3. *1/4 cup Besan (Chickpea flour/ Gram flour)
  4. *1 tablespoon semolina/sooj
  5. 1/8 teaspoon Haldi (Turmericpowder)
  6. 1/4 cup Thick Curd
  7. 3/4 to 1cup Lukewarm Water (adjust accordingly)
  8. Ghee or oil for Frying
  9. For garnishing
  10. *1 table spoon chopped pista
  11. 1/4 tea spoon crushed cardamoms seeds+
  12. 4 to 5 kesar threads
  13. Sugar syrup
  14. 1 cup sugar
  15. 1/2 cup Water
  16. 1 teaspoon Rose water or any essence
  17. 1/2 teaspoon Lemon Juice
  18. 1/2 teaspoon Cardamom Powder
  19. 1/8 teaspoon Saffron strands/ kesar threads

Instructions

  1. Assemble dry ingredients
  2. Add curd and water to make a thick and lump free batter.
  3. Whisk the batter rapidly for few minutes to incorporate air into the batter.
  4. Cover the batter and let it sit for 7 to 8 hours for fermentation
  5. Meanwhile make chashni for jalebies
  6. Heat water with sugar in a broad pan till sugar melts
  7. Add 1/2 piece of lemon in syrup to bring out the scum ..
  8. Then take off the scum with sieve or any spatula
  9. Cook the syrup till sticky like honey
  10. Don't make a thread consistency.
  11. Off the gas
  12. add kesar strands elaichi powder and rose water
  13. After 8 hours whisk the batter stir up in a circular motion ..
  14. Fill a pastry bag or a squeezable bottle with batter
  15. Tighten the cap.
  16. Heat ghee in a kadhai keep the heat at low
  17. lower the bottle or the pastry bag right over the hot ghee.
  18. Squeeze and move your hands in a circle making a swirl-
  19. start the circle from the inside working your way out.
  20. Turn the sides and fry spirals on midium flame from both sides till brown and crisp
  21. Put and keep fried jalabies /spirals in luke warm chashni for few mins
  22. Repeat the process with rest of the batter.
  23. Remove from syrup and serve. Can be eaten hot or cold.
