ABOUT Ghewar RECIPE

Ghewar is a honeycomb dessert from rajasthani cuisine. It is a disc shaped crisp cake made up of all purpose flour,soaked in sugar syrup. It is made specifically during rainy season for high degree of moisture in weather.

Ingredients Serving: 3

  1. Ghee 1/3 cup
  2. Ice cubes 4-5
  3. All purpose flour 1 cup
  4. Milk 1/3 cup
  5. Chilled water 2 cups
  6. Oil for deep frying
  7. Rabri 1 cup
  8. Chopped nuts 2 tbsp
  9. For sugar syrup
  10. Sugar 1 cup
  11. Water 1/2 cup
  12. Cardamom powder a pinch

Instructions

  1. IN A LARGE MIXING BOWL TAKE 1/3 CUP GHEE AND 4-5 ICE CUBES.
  2. RUB IT VIGOROUSLY.
  3. RUB IT UNTIL WHITE AND CREAMY APPROX. 2 MINUTES.
  4. ADD 1 CUP ALL PURPOSE FLOUR AND MIX NICELY.
  5. MIX 1/3 CUP MILK IN FLOUR MIXTURE.
  6. SLOWLY MIX 2 CUPS OF CHILLED WATER TO THE MIXTURE.
  7. PREPARE A THIN LUMP FREE BATTER.
  8. FOR SUGAR SYRUP HEAT 1 CUP SUGAR WITH 1/2 CUP OF WATER.
  9. GIVE A BOIL AND THEN SIMMER FOR 4-5 MINUTES.
  10. FILL THE BATTER IN A SAUCE DISPENSER.
  11. HEAT OIL IN A DEEP FLAT BOTTOMED PAN. WHEN OIL IS SMOKY HOT POUR 2-3 SPOON BATTER IN CENTRE OF OIL .
  12. POUR THE BATTER FROM THE HEIGHT OF 6-7 INCHES IN THREAD LIKE STREAM.
  13. MAKE A HOLE IN CENTRE AND POUR MORE BATTER IN CENTRE HOLE.
  14. KEEP LAYERING TO GET DESIRED THICKNESS. APPROX 1/3 BATTER FOR A 7" GHEWAR.
  15. WHEN IT IS BROWN ON SIDES AND CRISP IN CENTRE TAKE OUT OF OIL USING SKEWER ONTO A WIRE RACK IN PLATE
  16. TOP GHEWAR WITH WARM SUGAR SYRUP.
