About Healthy Whole-Wheat-Suji Cake Recipe

Have cake and its healthy too ! We all love cake,young and old alike ! My kids do too and I have experimented with a number of cakes over the years. Starting off from the plain maida cakes, I have tried to make them healthier by incorporating other healthier flours and flavours too. This is one such cake, I have tried out on a whim,turned out soft,fluffy and was appreciated by my family.

Healthy Whole-Wheat-Suji Cake

Ingredients to make Healthy Whole-Wheat-Suji Cake

  • Wholewheat flour- 1tea cup
  • Suji/semolina - 3/4th tea cup
  • Brown/Wholewheat/ atta Bread Slices- 2 -finely powdered in a dry grinder jar
  • Beetroot - 2 medium sized,boiled, cooled, peeled and pureed
  • apple-1 small pureed
  • Jaggery/ Sugar-1 1/4th tea cup, powdered or less, according to taste because the beets and apple add a sweetness of their own
  • Vanilla Essence - 2 tspns
  • Olive Oil - 3/4th tea cup
  • curd/Dahi - 2 tbspns
  • Baking Powder- 2 tbspns
  • baking soda-1 tspn
  • salt - a pinch

How to make Healthy Whole-Wheat-Suji Cake

  1. Sieve the wholewheat flour, suji, baking powder, salt and baking soda together.
  2. Pressure cook the beets with a little water till soft.,4-5 whistles.
  3. Cool, peel and puree them.
  4. Chop, peel (optional) and puree the apple.
  5. Whizz the bread slices in the mixer and keep aside.
  6. Powder the sugar/jaggery and keep aside.
  7. Combine all the dry ingredients together in a large, deep mixing bowl.
  8. Add the beetroot puree, apple puree and oil, little at a time, mix well using an electric beater.
  9. Add in the vanilla essence and dahi and beat well until you get a smooth batter.
  10. Bake in a pre-heated oven at 150 Deg C for 25-30 minutes or till done. Do the knife test before taking the cake out of the oven.

My Tip:

The beetroot and the apple puree not only provides the cake with a warm hue, they also make the cake flavourful and soft and one can get fussy eaters to have the vegetable and the fruit with ease in the cloak of a soft and delicious cake !
